Zucchini Appetizers

Ingredients

4 eggs
3 cups thinly sliced zucchini
1 cup Bisquick
1/2 cup finely chopped onion
1/2 cup grated Parmesan cheese
2 cloves finly chopped garlic
2 tablespoons snipped parsley
1/2 teaspoon salt
1/2 teaspoon marjoram or oregano
dash pepper
1/2 cup cooking oil

Instructions

Slightly beat eggs. Add other ingrediants except the Zucchini. Mix all ingredients thoroughly. Add a handful of Zucchini, stir to coat, repeat until all is coated. Spread into lightly greased 9" x 13" baking dish.
Bake at 350 degrees F. until golden brown, about 25 rninutes (30 minutes high altitude) . Cut into 1-inch by 2-inch pieces.

Note: Great as an appetizer or with a meal. Serve hot, warm, or room temperture.
