Date-And-Nut-Cake

Ingredients
  • 1 1/2 cups finely cut dates (8oz)
  • 1/4 cup soft shortening
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 2/3 cups flour
  • 1 tsp soda
  • 1/2 tsp salt

Directions:
  1. Pour 1 cup boiling water over dates, let stand until cool
  2. Cream together until fluffy (high speed for 5 minutes)
  3. 1/4 cup soft shortening
  4. 1 cup sugar
  5. 1 egg
  6. 1 tsp vanilla
  7. Sift together
  8. 1 2/3 cups flour
  9. 1 tsp soda
  10. 1/2 tsp salt
  11. Mix in alternately with (use low speed) date-water mixture and flour mixture
  12. Add in 1 cup broken walnuts
  13. Pour into 8 X 8 lightly greased and floured pan. Bake at 350* for 40 to 45 minutes
  14. Serve with whipped cream or frosting of your choice. creamed cheese would be good
