Date-And-Nut-Cake

Ingredients
- 1 1/2 cups finely cut dates (8oz)
- 1/4 cup soft shortening
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 2/3 cups flour
- 1 tsp soda
- 1/2 tsp salt
Directions:
- Pour 1 cup boiling water over dates, let stand until cool
- Cream together until fluffy (high speed for 5 minutes)
- 1/4 cup soft shortening
- 1 cup sugar
- 1 egg
- 1 tsp vanilla
- Sift together
- 1 2/3 cups flour
- 1 tsp soda
- 1/2 tsp salt
- Mix in alternately with (use low speed) date-water mixture and flour mixture
- Add in 1 cup broken walnuts
- Pour into 8 X 8 lightly greased and floured pan. Bake at 350* for 40 to 45 minutes
- Serve with whipped cream or frosting of your choice. creamed cheese would be good
