Blueberry Crumble Cake

Ingredients

  • 3/4 cup white granulated sugar
  • 1/4 cup shortening
  • 1 egg
  • 1/2 cup milk
  • 2 cups flour
  • 2 tsps baking powder
  • 1/2 tsp salt
  • 2 cups fresh or frozen blueberries ( thaw & drain)
  • 1 cup walnuts or Pecans broken pieces are Optional


Topping:

  • 1/2 cup white granulated sugar
  • 1/3 cup flour
  • 1 tsp cinnamon
  • 1/4 cup butter
  • 1/2 cup of chopped Nuts is optional


Directions

  • Preheat oven to 375*
  • Lightly grease an 8" X 8" baking pan
  • Cream together, sugar, shortening, and egg
  • In a seperate bowl, mix flour, baking powder, and salt.
  • Stir into sugar mixture alternating with milk. Fold in Blueberries & Nuts. Pour into greased pan.


  • Crumble:
    Combine butter, sugar, flour and cinnamon until crumbly. Stir in Nuts and set aside. Sprinkle over cake batter
  • Bake for 25-30 minutes
